Will these wheels fit with 275/35/19 and 305/30/19?

Yes but you might need a 5mm spacer up front

I got a good deal on some PS 4S 285/35/19. Do you think these can work without a spacer on the front?

They will fit but you're going to need some mandatory camber, and it will be close. Would not recommend. Most people running 285 front are going to be on track dedicated setups.

What’s your suspension setup and do you rub in the front? Ideally I’d like my car to sit a little lower in the front and not rub so trying to figure out the perfect tire size.

Any chance of getting a picture back down the car so can get an idea of the concavity of the rear wheel?

Can’t decide between RS EC7 or SM10’s

I’m actually running HRE R101LW 19x9.5et22 and 19x11et42 with 265/35 and 305/30 MPS4S. I’m running a MCS 2WR suspension and there’s definitely room to fit a wider tire. For the track I run either F 10et25 + R 11et44 with 285/305 tires or 10.5et36 F (with 15 mm spacer which makes it an et21) and 10.5et36 with 295/295 tires.
