Yesterday for lunch... Had some bagels left. Toasted a bagel, then fried two eggs. Put some smoked salt, pepper, paprika and herbes de provence on the eggs. Then put a slice of good cheese on the bagel, topped it with jalapenos and then put the fried egg on top of it all. Let it sit for a bit so the cheese can melt.

Cheap food is generally worse for you. Think about the cost of a 12pk of popcorn versus fresh veggies for example... It contributes to obesity and poor health for sure because poorer people can't afford fresh veggies, proper meats, etc and have to settle for the dollar menu instead. I'm with you though that eating unhealthily is a choice for MANY Americans who have the means to eat well but don't for convenience or any other reason.
There are many fresh vegetable choices at all prices, as well as meat choices. And poor people all qualify for food stamps, which are paid for by taxpayers, in addition to healthcare.

have you ever had "eggs en cocotte" ??

wife makes them on occasion in her little mugs.

she cooks then inside of mugs that is in boiling water or some shit - I don't pay attention, I'm usually doing husband things like sitting on the couch watching sports or playing on the forums while she is slaving in the kitchen.....

she puts bacon pieces, croutons and "Mexican crema" in them....

I usually get 4 of them but she only makes them every 2 or 3 weeks

**lemme see if I can find a picture of them that she made**

I have mate. My wife has the little Le Creuset cocottes but they unfortunately don't see much use...

Sounds amazing.

I once made this crockpot breakfast casserole type thing that was incredible. I wish I remembered the recipe exactly.

Something like six eggs scrambled, a bag of frozen hashbrowns, a pound of bulk breakfast sausage broken up, and a whole 16oz bag of cheddar cheese. Add some salt and pepper, put it in the crockpot overnight, wake up to cheesy goodness for breakfast. Mmmmm...

I wonder if I can put in a special request for her cocottes.....

we don't have crema at the house though

just so you know, every Mexican family that I know keeps this shit around for ALL occasions.....

All the Mexicans I know, living in Socal that's alot, bleed Cacique. I always always always have a jar of that, a big 64 oz bottle of taptio and jalapenos in the fridge. You can make a meal out that and some tortillas!

I fell in love with Tapatio while in the Corps. It literally can make the worst food on the planet taste ok. I carried around my own bottle of it on deployments or any time I had to eat at a chow hall.
