You have two options.
1) Read all the car's ECU's and their "as-coded" data is stored as a .ncd file in the E-Sys Data Folder \CAF subfolder. You can view these offline using the FDL Editor.
2) You can use the CAF Viewer, and view offline any of the 2000 plus CAFD files in the E-Sys Data Folder psdzdata\swe\cafd subfolder.
