Your theory is sound. You want something rated for more then you will ever need because as time goes on, that rating doesn't necessarily last.
On the other side of things, I've seen it said,

"Water resistant is good for a few rain drops, 10m is good for the sink, 30-50m is good for a pool and maybe a swim in the lake or ocean (waves)."

So in theory, I wouldn't take a 200m to 200m, I would get something more capable that I'd trust. But as you said, you're unlikely to ever get to that depth, and it you do, it's at least rated for that.
