I understand the need for it, but as family lore goes, my grandfather owned a piece of property on which a piece of the port of Oakland sits. I don't know the details, but they never felt the compensation was just. I'm sure the govt could get away with more back then.

Just is determined by fair market value, which isn't just the government saying your property is worth X, you can challenge any claim in court and fight not just the taking but what the proper value is.
These takings are generally in practice (like must aspects of land regulation) a necessary evil which is not to say there are not abuses associated with it especially because of how subjective the term "valid public purpose" can be to someone.
